==== Porotic hyperostosis/cribra orbitalia ==== It was long assumed that iron deficiency anemia has marked effects on the flat bones of the cranium of infants and young children. That as the body attempts to compensate for low iron levels by increasing red blood cell production in the young, sieve-like lesions develop in the cranial vaults (termed porotic hyperostosis) and/or the orbits (termed cribra orbitalia). This bone is spongy and soft. It is however, unlikely that iron deficiency anemia is a cause of either porotic hyperostosis or cribra orbitalia. These are more likely the result of vascular activity in these areas and are unlikely to be pathological. The development of cribra orbitalia and porotic hyperostosis could also be attributed to other causes besides a dietary iron deficiency, such as nutrients lost to intestinal parasites. However, dietary deficiencies are the most probable cause. Anemia incidence may be a result of inequalities within society, and/or indicative of different work patterns and activities among different groups within society.

== Evolution == Protein phosphorylation is common among all clades of life, including all animals, plants, fungi, bacteria, and archaea. The origins of protein phosphorylation mechanisms are ancestral and have diverged greatly between different species. In eukaryotes, it is estimated that between 30 – 65% of all proteins may be phosphorylated, with tens or even hundreds of thousands of distinct phosphorylation sites. Some phosphorylation sites appear to have evolved as conditional "off" switches, blocking the active site of an enzyme, such as in the prokaryotic metabolic enzyme isocitrate dehydrogenase. However, in the case of proteins that must be phosphorylated to be active, it is less clear how they could have emerged from non-phosphorylated ancestors. It has been shown that a subset of serine phosphosites are often replaced by acidic residues such as aspartate and glutamate between different species. Typical tofu-making procedures are cleaning, soaking, grinding beans in water, filtering, boiling, coagulation, and pressing. There are also types, such as Japanese raw silken tofu, in which the curds are not pressed. Coagulation of the protein and oil (emulsion) suspended in boiled soy milk is the most important step in the production of tofu. Salts or acids are commonly used as coagulants. Many variables affect the process, including the variety and percentage of protein in the soybeans used, slurry cooking temperature and coagulation temperature. Soybean proteins are mainly composed of 7S and 11S proteins. The negative surface charges on these globulins usually cause them to repel each other. Heating soy milk denatures the proteins and exposes hydrophobic groups normally oriented toward the inside of the globulin structure. Cations from coagulants bind the negatively charged groups. As the net charges of the protein molecules are neutralized, attractive hydrophobic interactions dominate over repulsive electrostatic charges, and protein aggregates are formed.
